Scott's of Wisconsin has been servicing the fundraising industry since 1971 and is a division of The Wisconsin Cheeseman. Scott's operates from a modern, efficient plant in Sun Prairie, Wisconsin with approximately 750,000 square feet of manufacturing, office and warehouse area. The Wisconsin Cheeseman is one of the largest manufacturer of food gifts in the world and has been in business since 1946. A. - In 1876 Daniel Peter, a Swiss candy maker, developed milk chocolate by adding condensed milk to a chocolate mixture made from the inner part of the cocoa bean. Semisweet and bittersweet chocolate contain more chocolate liquor and less condensed milk and sugar than regular milk chocolate.

Q. - What is White Chocolate?
A. - White chocolate is a combination of cocoa butter, sugar, butterfat, milk solids and flavorings. It gets it's chocolate flavor and ivory color from the cocoa butter. If the color of the product is bright white, there is no cocoa butter used in the production process. This is called confectionery coating.

A. - TRUE! Contrary to popular opinion, chocolate is not considered high in caffeine.

A. - All are about the same. None is more likely than the other to cause tooth decay. Any food containing fermentable carbohydrates such as starch or sugar can contribute to tooth decay. How often we eat these foods and how long they stay in contact with the teeth determines the likelihood of their causing cavities.

Q. - True or False?
Cocoa butter, the primary fat in chocolate, does not raise cholesterol levels.

A. - TRUE! In research studies, neither cocoa butter nor chocolate raise blood cholesterol levels.

Q. - Why is some Chocolate more expensive than others?
A. - Like fine wine, the price depends on the processing and quality of the original ingredients. Better cocoa beans, a greater percentage of cocoa butter, more extensive refining during manufacture, and the amount of hand work needed to fashion the chocolate are all factors used in determining the final price.

Q. - Why do we love Chocolate?
A. - Chocolate is unique amoung foods. It is used as an ingredient, a flavoring and a foodstuff. As such, it holds a special place in the culinary universe. Eating a small piece of chocolate is a heavenly experience - cocoa butter melts at body temperature and so there is that moment when the chocolate is no longer solid and not yet liquid. This sensation is irresistible to chocolate lovers. But there is more! Chocolate's aroma, it's ability to create "taste memories" and it's indescribably rich flavor all combine to make it a food most people cannot resist!
